What the tour is like

You go round with the people who make the oil. First, a tour of the mill: where the olives arrive, how they are washed, crushed and the oil separated, and how it is stored until bottling. Then a guided tasting where you learn to tell a good extra virgin oil and to pick out the fruitiness, bitterness and pepperiness of the local variety, cornicabra.

No previous knowledge needed. It is a relaxed, friendly visit that shows you what goes into the bottle you have at home.

The olive oil of the Montes de Toledo

The Montes de Toledo have their own Protected Designation of Origin for olive oil, the DOP Montes de Toledo, across the provinces of Toledo and Ciudad Real. It is a land of dry-farmed olive groves, holm oaks and hills, and its olive is the cornicabra.

  • ✓Cornicabra. The local olive: full-bodied, fruity oils with balanced bitterness and pepperiness.
  • ✓Cold extraction. Extra virgin oil is made by mechanical means only, with no heat or solvents.
  • ✓Right next door. The olive trees you pass on the way from Cork Valley are the ones that fill the mill at harvest time.

During the harvest or outside it

The tour runs all year. If you come during the harvest, usually from November to January, you will see the mill working: trailers of olives arriving, the smell of fresh oil, and the chance to taste the new season’s oil, the greenest of the year.

Outside the harvest the mill is quieter and the tour focuses on the process, the cellar and the tasting.
